Could you not just strap whatever size drybag you like to the bars in a similar position - no holster required?

I have one, yes you can, it's just a standard heavier duty drybag they supply
Also I don't think the bag that restrap sell with it is the best shape for the holster or visa versa
Holster is well made, my set up attempts lead me to think it works better with longer stems so you can tuck the bag closer to the frame to avoid interference with the TT bar hand positions

A full, firmly packed drybag is fine to strap directly onto aero bars like that. I've had some problems when it's not full things can shift around inside and it comes loose.
It can make quite a difference to handling having the weight far out in front. Even compared to a normal transverse mounted bar bag setup it's quite a big difference.
On the plus side, it does make a great table. You can balance stuff on the bag and the aero bars stop it falling off the sides.
