Does anyone have a route from a European airport, that takes around 3 days?
I have been looking at this one:

But think it might be a push as it's 60km each way to cologne airport.

Just get the train from the airport to Meinerzhagen. If you get an early flight you'll still have plenty of time for riding on the first day. Ride back to the airport on the third day if you've got time.
The areas around airports are, more often than not, pretty uninspiring on a bike so it never hurts to take the train.

Which airport are you flying from and when?
My local airport is Reus and it's on the doorstep of some great bikepacking countryside.
