I have 3 weeks off in January and would like to do a winter trip.

I was half thinking of heading to South Africa to try and ride the Spine of the Dragon or maybe a portion from Cape Town towards Port Elizabeth.

Alternatively are there any other suitable bike packing winter destinations in Europe that are likely to warm (ish)

Morocco worth a look? Or some of the southern Spanish routes. Seem to remember FLV rode one the other year.
