NP end-to-ends

Been doing a bit of daydreaming at work recently, and looking at trying to do some 2-3 day end-to-end trips of the various National Parks, starting with the north-of-England ones and maybe working around. The theory is to go on the longest axis of each park, end points defined as the furthest point where a road intersects the park boundary.
Lakes, Dales and North Yorks Moors look easy enough to plot. Pennine Bridleway may come close to covering both Northumberland and the Peaks routes in a oner. Anyone got any good ideas about the rest? Pembrokeshire coast could be especially tricky!
