Are they double boots? I've got a pair of Sorels that I haven't even thought about using on the bike due their bulk, but they look quite a bit sleeker.

That's bonkers in a brilliant way. It's a bit like a Cleland in niche-ness, probably just as impressive for what it's designer intended. At first glance, totally agree. But... Our handlebars are fastened in the same way so the top plate, if correctly toleranced and fitted should work. It could be a great product, it just looks wrong to me for sustained off road use.
All the weight wanging about on the end of a long lever, wrong.
Bags that can twist or slip into the wheels/pedals, wrong.
