So, I'd like to put some hydraulic discs on my Christmas build, I would like 160mm rotors at the back and 180 at the front, and my budget it about £100. What should I get?

Take a little trip over to Rose and search for Shimano disc brakes. They've got some listed for about £18 per end ... you'll need to swap the lines over but that's only 5 minutes work. The same brakes have been on my Inbred for nearly 3 years and have been superb (apart from a little incident on the Long Mynd but that was the discs rather than the brakes)
As for rotors, anything that's cheap at the time, Superstar or CRC are worth a look ... and don't forget you'll need adaptors too.

The bit that connects the caliper to the frame.Adaptors?
You'll need a type 2 and a type 3 (from the link below) if you want to run a 160R and 180F.

+1 for the Deore, got them on my 29er and I like them more than the Hope X2 on my other bikes.
