Two days with no resupply?
I've planned a three day ride but won't be able to resupply until the morning of the last day. This means carrying two days worth of food. I'll be taking dehydrated pasta type meals, muesli bars, sandwiches and packet custard. What other stuff would you take yourself?

With a stove? Dehydrated meals. Easy to home make these if your oven goes down to 50c.

To supplement any dehydrated meals ... Mini pork pies, Baby Bell, cold bacon butties (take up less room if they're pita), chocolate peanuts (Spar big bag for a quid).

bircher muesli - basically home made muesli with added fruit and seeds and milk powder- add water night before and leave it to soak - tons of calories in that

my own dehydrated meals
TBH every trip i do is has no resupply so just work out what you will eat, what it weighs for the calories and then just take what you are happy to eat - i take cous cous as its easy and can be rehydrated with cold water - just takes much longer- so works even if the stove dies
Lots of dried fruit and seeds - easy to nibble on throughout the day
Some sugary sweets - boiled or jelly beans
Semolina - add sugar and cinnamon and fruit before hand - its basically add hot water with a lot of stirring - i like to have a pudding now and again

I tend to eat protein all day and carbs in the evening. I'm quite happy eating Babybells and Kind nuts bars all day including breakfast, with maybe beef jerky for lunch. I only cook water so dinner is a packet of dehydrated stuff if I've got it (get the 2 person portion) or 2 or 3 packets of noodles. I don't drink coffee but will take a few green tea bags on a short trip, otherwise it's cold water.
The Kind bars or similar can be had quite cheaply if you shop around. If you're not used to eating nuts I'd suggest making them part of your diet (beware the calorie content) as they can make you amazingly windy if you're not used to them.

Fuel 10k peanut butter. Comes in chocolate flavour (or normal or seed)
In a plastic squeezable packet. Quite drying eating it neat but it's very calorific!

I was lost for a couple of days in Alaska once with nothing more than condensed milk and Graham Crackers. Did for me. Highly recommended.

Look at the nutritional information panel on the food items.
Fat has the most kcal per gram, but unless you are used to eating lots of it then
You should be able to get 4000kcals per kilo of weight.

Not very Calorific but I seem to crave fruit after a while and always put a couple of apples in my bag.

If you like tuna I’ve recently found John west jacket toppers, tuna in various sauces. The main thing is they come in a handy soft packet, easy to pack in/out. With a little couscous or pasta (pre soak in cold water or use the thermos cooking method to save fuel) and you have something resembling real food.

The price is premium but honestly I’ve been served worse food many times in pubs etc, sat in a cold muddy field it’s worth every penny

I roll out Marzipan then spread melted dark chocolate over it before rolling it up like a Swiss roll. Delicious and over 500 calories per 100g. Also peperarmi.

Handy, small, lightweight, adds a nice meaty (ok, fishy) component to pasta or couscous, comes in various flavours so no extra sauce necessary.
Smaller than tins of tuna usually.

If you get the ones in olive oil it can all along with the oil be eaten cold and the olive oil contains high density lipoproteins HDLs which clear cholesterol effectively cleaning the blood vessels.

I'm getting hungry reading all these suggestions.
My own staples are cheese, jerky and peanut butter. All dense calories. With a bag of tortillas and a few condiments just add some imagination.
