Thanks for all the comments folks. Spent a lot of time thinking about this and speaking to friends also. Most advice is going the 1x route for ease of running, setup and maintenance. I use a MSR jetboil type setup as my goto for backpacking. For lighter weight and size I go with an Alpkit Ti mug and Kraku burner. Super light and fits a decent gas bottle inside the mug. You could opt for the smaller gas bottle to.

I was originally going to go for frame, forks and wheels from Cotic and take the Hope 20Five wheelset option. Good choice on the wheels or do folk have better options at similar cost?

Thanks again to all for the info. Have been fiddling and tinkering with bar and shifter position, plus caliper adjustment and it seems to be much better now.
